Plugging a water line

I am disconnecting my ice maker, what would be the best solution to plugging the water line?  I tried to trace the line to its source and looks to be a nightmare.  I have a 38' Carver aft cabin with the ice maker on the aft deck.

You could put a hose barb fitting with a threaded end and a cap on the end of the hose.
